Peanut Sauce
A basic peanut sauce with a spicy kick! This was inspired by the peanut sauce from Kate's Crunchy Thai Peanut and Quinoa Salad from her blog 'Cookie and Kate.' She has such wonderful and amazing recipes, and that salad is flippin' delicious!
This peanut sauce is super tasty on salads, veggies, tofu, grains, beans,... well, anything really. 😁
Peanut Sauce:
Ingredients:
1/2 cup all natural salted peanut butter (256 grams)
2 tablespoons soy sauce, tamari, or coconut aminos
2 tablespoons rice vinegar
2 tablespoons maple syrup [or sweetener of choice (dates, honey, agave, etc.)]
1 tablespoon sesame oil
1 tablespoon gochujang (optional but gives a spicy kick)
1 - 2 teaspoons grated fresh ginger
water to thin to your desired consistency
2 tablespoons chopped cilantro (optional but gives a great flavor)
Instructions:
1.) Place all ingredients except cilantro in a tall sided bowl if not using an immersion blender, or in a tall cup if you are using an immersion blender.
2.) Whisk with a fork or blend until smooth.
3.) Add in the chopped cilantro and whisk or blend very briefly just to break down the cilantro leaves every so slightly.
4.) Enjoy! :)
Notes:
- If you'd like a lower a lower fat version, feel free to use a powdered peanut butter mixed with water (according to packaged directions) for the regular peanut butter
- Feel free to leave out the gochujang and use any hot sauce or chili sauce in its replacement
- Use any herbs (or none!) that you fancy (Thai basil would be a good one!)
- Add in one teaspoon of minced fresh garlic if you fancy!
